Vanillic acid is a natural compound – derrivative of dihydroxybenzoic acid. It is an oxidised form of vanillin and can be located in various plants in nature, however, the highest amounts can be found in the root of female gingsen Angelica sinensis.
The primary use of vanillic acid is as a preservative in foods and drinks. Due to anti-oxidative potential, vanillic acid is able to inhibit reactivity of various reactive molecules.
